What are Carbohydrates

Sugar converted to glycogen: The body converts some of these simple sugars into a starch in which the molecules are larger and structurally different. This starch is called glycogen and is stored in the liver and muscles as a short-term energy reserve. The starch from plants consists of two kinds, amylose and amylopectin.
